Bruschetta Chicken Burgers

You know, I have still yet to meet a burger that I do not like. Whether it’s made from ground turkey, chicken, or beef, nothing beats a burger.

I’ve been playing around with a few bruschetta recipes. This last week, I tried to create a bruschetta pasta, a bruschetta casserole, and they both failed. The reality of being a food blogger and working on developing a new recipe means that sometimes they don’t all turn out.

BUT, fear not, because my desire for that bruschetta flavor in something other than, well, bruschetta, has finally worked with these bruschetta chicken burgers.

I’m sure you could make this with ground turkey or maybe even beef, but I find that ground chicken is the perfect pairing to really taste these flavors.

Serves 4

Macros are for patty and cheese so you can add you own bun and toppings

Bruschetta Chicken Burgers

Ingredients
  

  • 1 lb ground chicken
  • 2 shallots diced
  • 2 cloves garlic minced
  • 50 grams cherry tomatoes halved
  • 3-4 tbsp fresh basil
  • 4 ounces fresh mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp freshly cracked black pepper

Instructions
 

  • Spray a pan over medium high heat with olive oil spray. Add garlic, shallots, tomatoes and salt. Cook for 5-7 minutes or until fragrant and golden. Remove and let cool slightly.
  • In a bowl, add the cooked tomatoes, garlic, shallots and fresh basil to your ground chicken. Mix and form into 4 patties.
  • Cook on a pan sprayed with olive for for about 5-6 minutes per side.
  • When you flip each burger, add 1 ounce of mozzarella to each patty and cover so the cheese melts.
  • Place on a bun with arugula and your favorite toppings!

Notice how a majority of the meals here are nutrient dense, whole foods? Yet, still I hear clients or people who have a similar diet fear eating something like pizza. It’s just pizza. 

It wasn’t a “free meal” it wasn’t a “cheat meal” it was just a slice of pizza because I was simply hungry after dinner. 

One of the biggest reasons I think people fear items like sweets, pizza, etc. is because they place restrictions on foods.  When you live your life in balance, there’s no restrictions, there’s no food guilt. There’s just pizza. Simple as that.

If you’re having a hard time with balance, try cutting out the restrictions instead of more foods.

Maintenance is not a free for all or excuse to stop focusing on healthy habits.

Every year, I have clients who crush a deficit phase because they make some awesome lifestyle changes.

When a client comes back to me and says they “fell off the wagon at maintenance”, it’s usually because they stopped being diligent about their habits.

Just so we are clear, lifestyle habits meant FOR LIFE, not just for a deficit. So the healthy habits you build during a deficit, like meal prepping, pre logging, going for walks, sticking to a workout routine, getting adequate water, fiber, sleep and rest days still need to be the focus at maintenance.

Crazy to look back and see the place where I once was; frustrated, tired, overwhelmed and wondering why nothing I was doing was working. 

Looking back, it’s nuts to me why I didn’t try the one thing I hadn’t tried all those years, eat more.
