Cilantro Lime Rice

Cilantro Lime Rice

The easiest and tastiest rice you will ever eat! ⠀⠀

 

Ingredients ⠀

1 cup dry, Long Grain Rice⠀

2 tsp, Cumin⠀

1 tsp, Garlic powder⠀

1/4 cup, Cilantro, chopped⠀

1 lime, Juiced Organic Lime⠀

1/4 tsp, Salt⠀

⠀

Directions⠀

This ain’t rocket science kids. We are cooking rice. In a pot, bring two cups of water to a boil. Add in the rice and the spices, not the cilantro or lime.⠀

Cover and turn heat to low for east least 20 minutes.⠀

⠀

Remove lid, fluff with a fork and add in the lime and cilantro.⠀

⠀

Ingredients for Cilantro Lime Crema ⠀

1 clove garlic, minced⠀

170 grams (3/4 cup) plain Greek yogurt ⠀

1 lime, juiced⠀

1 tsp lime zest⠀

1/2 cup cilantro⠀

Salt to taste⠀

⠀

Blend the ingredients together in a food processor until well combined. ⠀

⠀

Cilantro Lime Crema:⠀

Serves 4 (about 60g per serving)⠀

The sweet potatoes are tossed in a bit of olive oil, salt, pepper and fresh garlic and then roasted at 400F for 15-20 minutes flipping halfway.⠀

The salmon is seasoned with salt, pepper and garlic and seared on a pan.⠀
