Hi, hello. Let me take a moment and convert all you pumpkin spice fans over to cinnamon apple fans.
Dry:
2 cup oat flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp baking podwer
1/4 tsp salt
Wet:
2 bananas
1/3 cup maple syrup
2 eggs
1 tsp vanilla extract
Apples:
1 cup apples, diced (I used honeycrisp)
1 tbs butter
1 tsp cinnamon
1 tsp lemon juice
1 tsp vanilla extract
Preheat oven to 350F.
Combine the dry ingredients in a large bowl and whisk. In a separate bowl, blend the wet ingredients with a handheld mixer until the banana is throughly mashed. Add the wet ingredients to the dry and stir until combined. Pour into a prepared bread pan.
For the apples, melt the butter in a pan. Add the apples, cinnamon, lemon juice and vanilla. Let them sauté for about 8 minutes. Remove from pan and gently fold 3/4 of the apples into the batter in the pan. Add the remaining apples on top. Bake for 30 minutes.
