Cranberry and Walnut Couscous

Listen my love for the Whole Foods hot bar has grown tremendously since having their pearl couscous, so naturally I have tried to recreate it. 

 

Couscous:

1 1/2 cup water

1 cup pearl couscous (I used tricolor from Bob’s Red Mill)

1/2 cup toasted walnuts, chopped

1/4 cup dried cranberries

2 tbs fresh parsley 

 

Vinaigrette:

1/4 cup apple cider vinegar

2 tablespoons maple syrup

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/4 cup olive oil

Instructions:

To make the vinaigrette, place the vinaigrette ingredients in a bowl. Whisk together to combine. Set aside briefly.

Cook the couscous according to the instructions on the package. Once cooked, add the toasted walnuts, cranberries, vinaigrette and parsley.
