Greek stuffed pepper with homemade tzatziki

Greek stuffed pepper with homemade tzatziki

Please tell me you are not spending the new year eating chicken, rice and asparagus. I asked y’all and one of the biggest issues new macro trackers have is creating recipes that are flavorful and easy, yet still hit their macros. Leave that to me!

 

Stuffed peppers

20 oz 97/3 ground turkey

75g fat free feta cheese

100g red onion, diced

2 cloves garlic

1/2 tbs fresh oregano, chopped

Freshly cracked black pepper

Salt

5 large bell peppers

 

Serves 5

4 fat 12 carb 31 protein 

 

Tzatziki

200g fat free yogurt (fage)

1 tsp garlic paste

28g feta cheese

50g shredded cucumber

1/2 lemon, juiced

1 tbs fresh dill, chopped

Fresh cracked black pepper

Salt

 

Serves 5

63 g per serving 

1 fat 3 carb 5 protein

 

Instructions

Preheat the oven to 400F. 

For the peppers, start by combining the turkey, feta, red onion, garlic, oregano and s&p into a bowl until well combined.

Stuff each pepper with equal amounts of turkey mixture and place into a dish and into the oven for 30-45 minutes. I tented with foil for the last 10 minutes. 

While the stuffed peppers cook, combine the ingredients for the tzatziki in a bowl. Leave in fridge until ready to serve. 

 

Once peppers are done, remove from oven and top with 63g tzatziki sauce and a bit more of fresh dill. 

Total macros

5 fat 15 carb 36 protein

Believe me, if you’re doing #tightertogether , this week is crucial to aid with weeks 4 and 5! If your carb cycling, keep carb cycling. If you’re at maintenance, stay at maintenance. If you’re building your plate, keep building that plate! Your body deserves food with or without training. 

This week comes at a perfect time for me as I am heading to the beach for a wedding. I plan to take it easy and provide my body a lot of rest!
