Greek zesty chicken and rice

4 chicken breasts

1 tbs extra virgin olive oil

3 cloves garlic, minced

1 tsp red pepper flakes

Lots of salt and pepper

3 tbs basil, chopped 

2 tbs fresh parsley, chopped 

1 tbs fresh oregano, chopped 

Juice of 1 lemon 

1 head of garlic, sliced

1 red onion, quartered 

 

Topping:

1 tbs olive oil

3 tbs basil

2 tbs fresh parsley 

1 tbs fresh oregano 

Juice of 1 lemon

Rice:

1 cup jasmine rice

1/3 cup kalamata olives, sliced

2 tbs parsley, chopped 

Zest of 1 lemon

Plenty of salt

Toss the chicken with all the ingredients on a sheet pan. Bake 425f for 30 minutes or until chicken reads 165f. Combine all the ingredients for the topping in a bowl and top on chicken breasts as soon as they come out of the oven. Cook rice and add the olives, parsley, zest and salt. Enjoy!!
