Grilled Scallops

Grilled Scallops

Grilled scallops are one of the quickest and easiest meals to make. Here’s what I do:

 

1/2 tbs butter, melted

1/2 tbs olive oil

8 oz fresh scallops

1 large clove garlic, minced

1 tsp fresh thyme

1/2 tsp sea salt

1/2 tsp freshly ground black pepper

Freshly squeezed lemon

 

Heat a grill pan or sauté pan over medium high heat. Pat dry the scallops and place into a bowl. Add the garlic, salt and pepper. Toss.

 

Use the olive oil to coat the pan. Place each scallop down for 1-2 mins max per side and flip. I baste on the melted butter as soon as I turn them. Once done cooking, top them with the thyme and a squeeze of lemon.

 

I served this with pureed butternut squash. I simply roasted about a cup of squash for 25 mins at 400F in the oven, seasoned with 1-2 tsp olive oil, salt and pepper. Once done, I place it into a food processor and add 1 tbs grated parmesan cheese. Blend.
