Honey roasted beets and butternut squash

Honey roasted beets and butternut squash

The most perfect side dish to add to any meal! Beets were on my shopping list last week and I am so glad I picked them up! Beets are high in fiber, iron, calcium and vitamins A & C. They are also high in nitrates which aid in both blood flow and pressure. And accompanied with my favorite vegetable, butternut squash, this combo is like Batman & Robin.

1 cup beets, chopped

1 cup butternut squash, chopped

1 clove garlic, minced

1 teaspoon fresh thyme leaves, minced

1/2 tsp sea salt

1/2 tsp freshly ground black pepper

2 tsp olive oil 

1 1/2 tbs honey 

28g fat free feta cheese 

 

Preheat the oven to 400 degrees. Peel butternut squash and chopped both it and the beets in 1 inch chunks. 

Place the cut squash and beets on a baking sheet and toss with the olive oil, 1 tbs of honey, thyme leaves, salt, and pepper. Roast for 30 minutes, turning once or twice with a spatula, until the beets are tender.

Remove from the oven and immediately toss with the feta and the remaining honey. Sprinkle with salt and pepper and serve warm.
