ROASTED EGGPLANT WITH CHEESE AND BASIL PESTO

Roasted Eggplant with Cheese and Basil Pesto

Its very rare I do a giveaway, but when a product is this good, I just have to share! Ive been using the Hamilton Beach Stack & Snap 8-Cup Food Processor for all of my mixing and blending needs and you guys, this is the best food processor I have ever used. I used it to make a nut-free basil pesto to top over roasted eggplant!

 

Ingredients 

1 large eggplant 

3 gloves garlic

2 handfuls fresh basil 

1 handful fresh spinach 

100g parmesan cheese

1/2 cup extra virgin olive oil

1/2 tsp salt

1/2 tsp black pepper

Dash of red pepper flakes 

1/2 lemon, juiced

4 oz mozzarella cheese 

 

Instructions 

Slice your eggplant in about 1/4” rounds. 

Spray a grill with olive oil spray and grill each side for about 5 minutes per side. 

For the pesto, add the garlic and parmesan to the food processor. Pulse until the garlic is minced and the cheese is grated. 

 

Add in the spinach and the basil. Pulse until blended. 

 

Turn the mixer on and stream in the extra virgin olive oil. 

 

Add the salt, pepper and red pepper flakes. Blend for a final time. 

 

Place into a serving dish and squeeze the lemon juice over the top. 

 

Once the eggplant is grilled, place onto a baking sheet and top each piece with cheese. Broil in the oven until the cheese melts (be sure it doesnt brown!). 

 

Remove from oven and top each piece with a tablespoon of the pesto.

Believe me, if you’re doing #tightertogether , this week is crucial to aid with weeks 4 and 5! If your carb cycling, keep carb cycling. If you’re at maintenance, stay at maintenance. If you’re building your plate, keep building that plate! Your body deserves food with or without training. 

This week comes at a perfect time for me as I am heading to the beach for a wedding. I plan to take it easy and provide my body a lot of rest!
