Sloppy Joes

I mean, come on. Who doesn’t like a Sloppy Joe? A messy and flavorful American staple if you ask me.

Okay, maybe not a staple, but growing up in my household they were. If it wasn’t a sloppy Joe, it was a casserole (mind you, we are from Alabama and are about as southern as they come). My mother’s love (and lack of cooking knowledge..sorry mom) for easy, one pan dishes is the exact reason you don’t see a lot of them on my food blog… there’s nothing I hate more than a casserole.

But sloppy Joe? I can work with that. I tried my hardest to gourmet-ify it. I also made it much healthier than the traditional can of sugar you are used to dumping into ground beef and calling it a meal.

So, that’s what I did. And what do ya know, these turned out better than I could have ever expected.

Ingredients
  

  • 1 tbs olive oil
  • 140 grams onion diced
  • 175 grams red bell pepper diced
  • 2 cloves garlic minced
  • 1 lb 93/7 ground turkey
  • 1/2 cup ketchup Great Value Organic is my favorite
  • 1/4 cup BBQ sauce Fox Bros BBQ sauce is my recommendation
  • 1 tbsp worcestershire sauce
  • 1 tsp mustard
  • Salt and pepper to taste

Instructions
 

  • Add the olive oil, onion and peppers to a pan over medium heat. Cook until slightly translucent and then add the garlic. Cook until fragrant.
  • Add in the ground turkey and cook throughly.
  • Add the remaining ingredients and cook 3-5 minutes. Remove from heat and serve warm.

    My husband and I just made these for the first time and couldn’t believe how delicious they were! We used Kinder’s Zero Sugar Cali Gold BBQ sauce and topped it with a barely there amount of shredded Parmesan on a sesame bun. Perfect healthier comfort food alternative that can be enjoyed by adults and kids alike. The best part is how simple and easy this recipe is to make. Will definitely make again!

Moving days 1-2!

This weekend was all about paint. We wanted to get the house painting prior to any furniture coming in so we got straight to work. Lucky for me, my mom has painted every house we have ever lived in so she offered to help. Between her and I, we finished most of the house, just have the bedrooms left!

Adam and dad worked on changing out the patio ceiling fan, installing two lights, and ripping up the patio floor to install LVP.

By the end of Sunday, our mattress had finally arrived and it was our first piece of new furniture that was officially in the house! We decided to buy everything new, so a majority of things are not coming until later but that doesn’t bother me, I’m just thankful to be in our home and have such a great family to help out. 

Finishing client emails today, heading to the gym for 30 mins and getting back at it! 👩🏼‍🎨

Honey, we’re home!!

After almost a year in the housing market from hell, we finally have a house! And honestly, it was worth every bit of the wait. 

Seems like God loves to remind us of patience and trust amongst a season of waiting.

Whether it was waiting over 10 years to find and date someone like Adam (dont settle ladies, the love of your life could very well be 7 house down from you and you not even know it!).

Whether it be submitting application after application to be on Food Network to eventually complete (and win) a show. 

Whether it be choosing to go back to school at 27 to get the proper education I needed to pursue a career I love and be my own boss.

Whatever it is, if you are in a season of waiting, keep praying and keep patient. In the end, God has the ultimate plan, and it looks pretty darn good to me. 

Who is ready for all things renovation, decor and new recipes!?!

Lets discuss effort.

One thing I can tell you about each and every one of these clients is that their success is not due to me. It’s due to their consistent effort, patience, and trust that they instilled in me to be able to get each and every single one of them eating more than they ever had prior to coming to me. I’m not showing you before and afters of people eating less, I’m showing you what MORE food can do to a body.

I’m showing you what a little effort to change each day does. The beauty of it? That looks different for everyone. 

Maybe for someone, having one more glass of water is effort.

Maybe for someone, parking a bit further away to walk more is effort. 

Maybe for someone choosing to prep lunch instead of eat out is effort.

Maybe for someone adding a 2.5 lb plate to the bar or one more rep is effort.

Effort looks different to each and every person, but I can promise you that it all adds up. Small changes lead to big habits.

Looking for a refreshing snack to beat this summer heat 🥵? This easy ceviche recipe is the perfect thing to cool off with!

100g red onion, diced
170g Roma tomatoes, depulped and diced
90g bell pepper, diced
10.5 ounces shrimp, diced
115g avocado, diced
1 handful cilantro
1-2 jalapeños, diced (optional)
3 limes, juiced

Combine all the ingredients into a bowl and let sit for at least 30 minutes.

Serves 5
About 160g per serving
8 carb | 8 protein | 4 fat
