Spiced Salmon and Vegetables with mango salsa
Ingredients
Salmon and vegetables
- 12 ounces salmon fresh
- 2 large bell peppers chopped
- 1 medium red onion chopped
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tbsp paprika
- 1 /2 tbsp garlic power
- 1 pinch cayenne pepper
- 1/2 tsp salt
Mango salsa
- 1 large mango diced
- 1/2 small red onion diced
- 1 jalapeño diced
- 1 lime juiced
- 1/2 cup cilantro chopped
- 1/4 tsp salt
Instructions
Salmon and Veggies
- Preheat the oven to 400F.
- In a small bowl, combine the spices and olive oil. Mix well and then toss on the salmon and chopped veggies.
- Place the veggies and salmon on a pan and roast for 15 minutes.
Mango Salsa
- Combine the mango, jalapeño, lime juice, cilantro and salt in a bowl. Toss and top each serving with 1/3 of salsa.
