Ingredients

  • 1 tsp extra virgin olive oil
  • 260 g sweet potato raw, cut in 1/2-in cubes
  • 16 oz 93/7 ground turkey
  • 100 g white onion diced
  • 2 cloves garlic minced
  • 1/4 cup chicken stock
  • 3 oz mushrooms sliced
  • 15.5 oz light red kidney beans canned, drained and rinsed
  • 84 g frozen corn kernels
  • 2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp chipotle chili pepper
  • 1/2 tsp dried oregano
  • Dash cumin
  • S&P
  • 52 g fat free cheddar cheese
  • Handful cilantro chopped

Instructions

  • In a pan over medium heat, add the olive oil and cubed potatoes. Add a good pinch of salt.
  • Cover and allow the potatoes to cook 10-12 minutes, stirring occasionally.
  • I add a splash of chicken stock about halfway. They should be fork tender by 12 mins.
  • Remove from the pan, but keep them covered. You’ll add them back in later.
  • In the same pan you were using, add some olive oil spray and sauté the onions and garlic. Add a good pinch of salt and freshly cracked black pepper.
  • After about 6 minutes, add the mushrooms and continue to sauté for 3-5 minutes.
  • Add in your ground turkey and cook thoroughly.
  • Add in the can of kidney beans, cooked sweet potatoes and the corn.
  • Cover and let simmer for 10 minutes, stirring occasionally.
  • Add the cheese and cover again until it melts.
  • Top with chopped cilantro and whatever you typically put on chili! We added avocado and hot sauce.
