Turkey Meatball Soup

Turkey Meatball Soup

My turkey meatball soup is the easiest and quickest way to warm yourself up. The low was 43 last night and let me tell you, I was not here for that, but I am here for all the soups!⠀

Meatballs⠀
16oz 93/7 turkey⠀
1 tsp parsley⠀
1 clove garlic, minced⠀
1 tsp dried rosemary⠀
1/2 tsp dried oregano⠀
S&P⠀
Mix and roll into 16 balls.⠀
⠀
Soup⠀
1 tsp olive oil⠀
1 large yellow onion, diced⠀
3 stalks celery, diced⠀
2 large carrots, diced⠀
1 clove garlic⠀
1/4 tsp salt⠀
4 cup chicken stock (mine was homemade so I controlled the salt amount, I’d recommend using a low sodium one and adding salt if needed)⠀
3 cups spinach⠀
6 sprigs fresh thyme⠀

Start by sautéing the onion, carrots and celery in the oil in a large pot over medium heat. Add some salt so the veggies sweat. Once the onions are translucent, add the garlic. Place the meatballs in the pot and add the stock. Cover and cook 25 minutes. Add the fresh thyme and the spinach. Cook another five minutes and serve!⠀

 

If you want to add some carbs, dice up some sweet potatoes, butternut squash or add some quinoa and let it cook in the soup!
