Ah, yes yet another white chicken chili recipe, but I promise this one is my favorite.
INGREDIENTS
- 12 oz boneless skinless chicken breasts – trimmed of excess fat
- 1 yellow onion – diced
- 2 cloves garlic – minced
- 3 cups chicken broth – (low sodium)
- 15oz can great Northern beans – drained and rinsed
- 4oz cans diced green chiles – (if you do not have the green chili seasoning, I would do 2 cans)
- 15oz can whole kernel corn – drained
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 3/4 tsp oregano
- 1 tbs green chili seasoning from Williams Sonoma
- Small handful fresh cilantro – chopped
- 4 oz reduced fat cream cheese – softened
TOPPINGS
- sliced jalapenos
- sliced avocados
- Squeeze of lime
INSTRUCTIONS
Dump all of the ingredients (except cream cheese) into a crock pot and cook on high for 3 hours. Remove the chicken once cooked and shred with two forks or a hand mixer and place back into crock pot along with the cream cheese. Stir until cream cheese melts.
