White Chicken Chili

Ah, yes yet another white chicken chili recipe, but I promise this one is my favorite.

INGREDIENTS

  • 12 oz boneless skinless chicken breasts – trimmed of excess fat
  • 1 yellow onion – diced
  • 2 cloves garlic – minced
  • 3 cups chicken broth – (low sodium)
  • 15oz can great Northern beans – drained and rinsed
  • 4oz cans diced green chiles – (if you do not have the green chili seasoning, I would do 2 cans)
  • 15oz can whole kernel corn – drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1 tbs green chili seasoning from Williams Sonoma
  • Small handful fresh cilantro – chopped
  • 4 oz reduced fat cream cheese – softened

TOPPINGS

  • sliced jalapenos
  • sliced avocados
  • Squeeze of lime

INSTRUCTIONS

Dump all of the ingredients (except cream cheese) into a crock pot and cook on high for 3 hours. Remove the chicken once cooked and shred with two forks or a hand mixer and place back into crock pot along with the cream cheese. Stir until cream cheese melts.

Serves 4
